Craft
Traditional pan-firing: flat and neat, a tender green, the high heat locking in the fresh fragrance of pre-Qingming.
Water temperature
85–90°C; never pour boiling water directly onto the tender buds
Brewing
A glass or a white porcelain gaiwan with 3g of leaf at 85–90°C (let boiled water cool, lid off, for about a minute); add water first, then the tea. Let the buds and leaves open; drink after a minute or two, and when a third is left, top up — fresh and brisk, never bitter.

CARE

New-season tea, sealed in a light-blocking foil pouch; store away from light at room temperature, and once opened drink within 30 days to keep it fresh.
