Meizhan is normally a cultivar for oolong; made as a Souchong, its high aroma is kept whole — bold, with a plum-like tartness — while the body remains the sweet softness of a black tea.

- Brew with boiling water; pour off the first two infusions at once, then add 5–10 seconds to each infusion after. We suggest a 110ml porcelain gaiwan with 5g of leaf.
