Mellow is depth, crisp is liveliness—the two are rarely found together. Crisp Mellow Rougui has a thick body that opens out and melts, going down without clinging to the throat, its returning sweetness carrying a cooling note. Those used to strong tea will understand how rare that "crisp" is.
