Chubai Gaiwan
White porcelain is the ground note of tea ware, and it is unforgiving of the firing. The Chubai gaiwan carries no gilding and no pattern, putting its craft where it cannot be seen: the angle of the flared rim, the steadiness of the knob, the evenness of the body. Fired at high temperature, the body is dense, pours clean and crisp, and is slow to hold the trace of the last steep.
It is not the kind of object that must be locked away and handled with care. Steep a pot of Longjing alone in the morning, top up a Rougui for a friend in the afternoon, rinse it clean and set it on the table. For something used every day, working well matters more than looking well; and after long use, it looks well on its own. Begin with this one, and you slowly learn how tea is meant to be drunk.
