TASTING
Clean fragrance rising high, the liquor a bright emerald.

A touch of bitterness melting at once, sweet and mouth-watering, with a long, lingering returning sweetness.
Every leaf is selected, even and uniform in shape, like the West Lake shore under spring rain. The first sip lifts with clean fragrance, the liquor a bright emerald; the initial touch of bitterness melts at once into sweetness and mouth-watering—the inheritance of Longjing's thousand years as tribute tea, the plain honesty of pre-Qingming buds.

SPECIFICATION

- Type
- Green tea · Workshop series No.2
- Spec
- Pre-Qingming · Hangzhou growing area
- Origin
- Zhejiang · Hangzhou
- Craft
- Traditional pan-firing; flat and upright, a tender green, the high heat sealing in the pre-Qingming freshness.
- Water temperature
- 85–90°C; never pour boiling water straight onto the tender buds.
- Brewing
- A glass or a white porcelain gaiwan, with 3g of leaf. Use 85–90°C water (boil, then leave the lid off for about a minute). Water first, then the tea; let the buds unfurl, drink after a minute or two, and top up when a third remains—fresh and lively, never bitter.
