Old-cong Shuixian is a matter of tree age. Century-old bushes drive their roots deep into the rock; their trunks wear moss; the liquor carries moss, wood and cong notes of its own—rare among rock teas, a cup that holds the passage of years. The body is thick and smooth as rice milk, with a cool sweetness that lingers at the back of the throat. An important gift deserves an important tea.

- Pour 100°C water from high. First brew 3–5 sec; from the second, extend the steep with each round. Drain the gaiwan after every pour so the leaves do not stew. Good tea lasts many brews—no need to hurry.
